Separate the open-source platform from EAS and native setup

EAS is a hosted service deeply integrated with Expo's open-source tools, not the same delivery model as this repository. Verify per-platform certificates and secrets, native dependencies such as CocoaPods, and which capabilities require a custom build instead of Expo Go. Some dependencies use licenses other than MIT.
