Replace local Compose defaults with production-grade TLS, secrets, backups, and upgrade procedures

The Docker Compose guide is recommended for smaller instances, but the local quick-start OPENPROJECT_HTTPS=false setting is not a production configuration. Treat SECRET_KEY_BASE like a password and design persistent database/assets, backups, TLS, and upgrade procedures.

The current development branch uses Rails 8.1.x on the backend and Angular 22 with TypeScript and a broad frontend dependency set. Deep customization therefore needs dependency upgrades and regression testing aligned with OpenProject releases.
